Hey Team!

I’m popping out videos during cooking sessions on Mondays now! They’re pretty basic but I try to keep them short and entertaining. If you want to know what tunes I’m listening to, some cooking tips etc check them out.

It’s Thanksgiving! Lots going on with Tom’s birthday, cottage winding down, and the looming presence of a tasty bird cooking in the oven. I’ll actually be cooking and delivering a shortened menu with the expecatation that clients will be enjoying leftovers.

First!

My recipe for a stuffing sandwich (yes, bread on bread)

Chris’ Leftover Stuffing Sandwich Recipe

  • Two slices of bread
  • Heaping bowl of stuffing
  • Gravy; warmed
  • Cranberry sauce
  • some small pieces of turkey (optional but recommended)

Warm the stuffing in a hot frying pan with a bit of oil to crisp up the stuffing. Try to shape it a bit into a bread sized loaf.

Spread some cranberry sauce onto the bread.

Slide the warmed and crisped stuffing onto a slice of bread. Top with some hot gravy and cold turkey.

Delicious.

Easy Party Enchiladas with Jalapeno Cream – Made this for our families weekend and they consistently get praised and eaten. I gussy up the original recipe with some ranchero sauce and extra seasoning.

Roasted Veggies with Squash and Sous vide Chicken Breast – Brussel sprouts roasted are awesome. Like, AWESOME. They caramelize and retain a bit of bite. Pair them with some broccoli and some squash and then drizzle with garlic tahini and chicken breast and that’s a warm and comforting sort of salad that sticks to your ribs on a cool Fall day.
