We’re so back baby!

A bounty of good food cooked for families. I’ve also started creating some videos, I did one today about the difference between a Chef and a Cook, and what makes someone “pro”. I also talked a bit about what you get when you order from me. Went over some portion sizes and general costs. For example last week’s meals came to around $160 for a family of 4. Each main serves a generous 4 servings. Cheaper and much healthier than eating out!

Spooky season hits its apex next week so I’m including shishito peppers on the menu as a bit of a trick/treat for folks. If you’ve never had them they’re a small pepper you cook, and drizzle with lime juice. Most of them are sweet but every now and then you get a really hot one, and you can’t tell the difference.

The rest of the menu is:

Italian American Meatballs – Tender and meaty, I make them pretty large so you can enjoy that cartoon spaghetti feel with giant meatballs. Super on a sandwich or just on their own as well.

Sweet Potato, Lentil and Coconut Soup – I really like sweet potatoes and lentils as they create a nice texture in soup. Red lentils also offer around 10 grams of protein per serving!

Chicken Cassoulet – This isn’t the very heavy French classic made with duck confit etc. This is a lighter chicken dish with pork sausages and white beans. Make sure you make the croutons to float in the broth and soak it up.

Bitter Greens, Fennel and Citrus Salad – Bitterness isn’t for everyone. A little bit of it helps to balance a meal and with our somewhat heavier menu above I want a salad that is crispy and crunchy and bright and contrasts with the heavier elements.

Blistered Shishito Peppers – Trick or Treat! Blistered and spritzed with lime most of them are sweet and gentle, but every now and then you get a hot one (they’re not that hot) lots of fun for kids as they try to guess which are spicy.
